Vegetarian Tortilla Noodles

Story? What story? I had tortillas.. lots of them...I didn't want to make enchiladas.. or rolls.. and they were too big for tacos too.. so what I did was... got inspiration from an old recipe.. which called out to cut "rotis" into thin strips... and make noodles... yummy.. soft...off-white noodles...short & simple..

Please note that I used white tortillas.. so this recipe may not taste or look the same with wheat tortillas.. also I didn't add eggs (I don't know why.. I should have).. so try it with different combinations.. and let me know how it turns out to be...



Here goes the ingredients..

  • 6 white tortillas... cut into thin strips (Place two tortillas on top of each other.. roll them into a roll.. cut thin strips starting from one end..)
  • 1 green belle pepper
  • 2 medium sized carrots
  • 1 small onion
  • 4 - 5 garlic pods
  • Salt + Pepper
  • 1 table spoons soya sauce
  • Small amount of sweet chili sauce
  • Little tomato ketchup
  • Olive oil


And then the process

  • Cut the veggies into long thin strips.. I had used carrots, green pepper, onions & celery
  • Roughly chop the garlic pods
  • Heat olive oil in a pan.. when hot add the garlic pods..
  • Next goes the onions..
  • When onions are sizzling.. Add the veggies...all of them

  • Sprinkle salt + pepper.. and let it cook in the open for a while.. till the veggies leave water and start to cook down
  • When the veggies are almost cooked.. you can split them apart using the spatula.. then its time to add the tortilla noodles & then season with salt + pepper + soya sauce + sweet chili sauce + tomato ketchup.. 
  • Give it a good mix.. cover & let it steam for a while..
  • This is when the tortillas cook & become soft.. I use the store bought ones.. so they are already cooked.. thus it wasn't necessary to cook them much..
  • 5 mins.... and then.. all done !!
