Broken Wheat Khichdi

Khichdi is a family favorite, comfort food which comes in handy in many occasions where you don't feel like cooking elaborate meals & yet want something healthy & yummy. 

Khichdi can be dressed up or dressed down as per your mood. You can make it spicy or mild. You can make it tangy or slightly sweet. Options are endless. 

Khichdi is traditionally made with rice & lentils. Sometimes we put vegetables as per our need / mood / laziness.. :) This particular khichdi is a recipe that does not use rice. Instead it uses broken wheat (daliya). Broken wheat is easily available in the grains isle in any Indian store. It is not gluten free but less white carbs than rice so if you are looking for a change in the regular khichdi recipe, try this.




What I used

  • 1/2 cup broken wheat
  • 1/2 cup yellow moong dal
  • 1 cup of mixed veggies (Broccoli, corn, carrots etc) 
  • 2 tbsp Ghee
  • 1 bay leaf
  • 1/2 tsp Jeera (cumin) seeds
  • Hing (asafoetida
  • Salt + Pepper + Turmeric + Wee bit sugar
  • 1 tsp Ruchi Dalma Powder
  • Water
  • 5 Lit. Pressure Cooker
Process
  • Dry roast broken wheat & moong daal in the pressure cooker & when you get a nice smell of roasted grains, take it out in a bowl & soak in water for about 10-15mins. 
  • Meanwhile chop the veggies (of your choice) in small pieces - wash & clean
  • Heat ghee in the pressure cooker
  • When hot, splutter Jeera seeds + Hing + bay leaf
  • Next goes in the veggies + Salt + Turmeric + Ruchi Dalma Powder + Pepper powder

  • Fry without burning them (Low - med. heat)
  • Next goes in wee bit sugar & the soaked grains
  • Fry together for some time (about 3 - 5mins) 
  • Next goes in 2 cups of water (1 cup grains = 2 cups water). You may use a little more if you want the khichdi to be a bit runny. 
  • Let the mixture come to a boil. 
  • Then cover & pressure cook for 4 whistles. 
  • Once the pressure dies down, serve hot with yoghurt & achar. 

This is a very good recipe for light dinners or easy lunches or just when you are missing home. This will instantly take you back home.
