Pressure Cooker Vegetable Pulao

 Some days are just so lazy that they inspire you to do one-pot meals which is full of the right combination of Carbs + Veggies + Fat right in a Pressure Cooker. Those are the days when your hands & legs have given up totally. Those are the days when your mind has stopped thinking about food. Those are the days when the creativity has reached it's fullest content. When that happens to you, try this recipe. It is a super quick recipe because I used Organic Frozen Vegetables & Yes, I used my good old Indian Hawkins Pressure cooker for this recipe (as the title suggests). 



This recipe is Gluten Free & gets done in like 15 minutes or so and is best enjoyed with some simple Raita  & Pakudi or Papad or may be a sprinkle of thin sev. Take your pick. It's a lazy day/night so do your best. You deserve a little downtime. 

What I used

  • 1 cup Basmati Rice
    • Washed & soaked in water (till we are ready to use it)
  • 1.5 cups organic Frozen Vegetables. I have the pre-mix of Carrots + Beans + Peas + Corn
  • 2 tbsp Ghee (Must do in Ghee, It's a good fat & NO it won't kill you)
  • 1 tsp Cumin seeds + 1 cinnamon stick + 1 star anise
  • Salt + Turmeric + Pulao Masala (Really any flavoring masala)
  • My 3 Lit. Hawkins Pressure Cooker
  • A wooden spatula
Process
  • Heat the pressure cooker on medium heat
  • When hot, add the ghee & let it melt
  • Add Cumin seeds + Cinnamon stick + star anise & fry for 10 seconds
  • Add the frozen vegetables (It's OK if they are not defrosted, the pressure cooker will take care of it)
  • Add Salt + Turmeric + Pulao Masala and give it a good mix
  • Fry the veggies on medium heat for like 30 seconds (Just break them down if they are sticking to each other due to being frozen) 
  • Next add the rice & vera very lightly mix them all up. 
  • Add 1.25 cups of water (For every cup of rice use 1.25 cups of water)
  • Give everything a good mix ensuring that all rice grains are pushed into the water & are not sticking to the sides of the pressure cooker
  • Close the pressure cooker lid with the rubber band & vent whistle on.
  • Increase the heat to High & cook the rice for exactly 1 pressure whistle.
  • Once you get the first whistle then immediately turn off the heat. 
  • Let the cooker cool down & all the pressure released on its own. Do not mess with the cooker before that. 
  • Once all the pressure has been released, open the cooker carefully & fluff up the rice using a fork.

I served this rice hot with boondi raita & aloo pakudi. Enjoy !!
