Broccoli Carrot Soup
Winters always call for hot soup & lately my family & I have been relishing home made Instant Pot soups with garlic bread (made out of $1 Walmart Bakery's French Bread). Using the Instant Pot is so so easy & the best part of the clean up or the lack thereof. Soups are best cooked in an Instant Pot where the steam cooks the vegetables & also you don't have to watch the boiling pot (literally). I have not made any soup yet in the IP using anything other than vegetables & the results have been amazing.
Making anything in the IP is less time consuming & less cleaning up & less waiting & less hassles. Literally, this soup can be whipped up in less than 15 minutes.
What I used
- 1/4 cup chopped red onions
- 2 medium heads of broccoli
- chopped into small pieces
- 1 cup shredded carrots
- came prepped in a packet from walmart
- 2 tbsp butter
- 2 cups chicken broth (Can also use Vegetable broth or just plain water or a mix of either)
- Salt + Pepper
- 1/4 cup heavy cream
- 1/2 cup cheddar cheese
- I had the block kind which I grated
- Instant Pot Dup 6Qt
- A potato masher or Pav-bhaji masher
Process
- Set the IP on sauté on High & let the sign "HOT" come up
- Then add the butter & it will melt pretty quickly
- Next add the onions & sauté for 30 seconds
- Next add the carrots & the broccoli & sauté for another 2 min or so
- Next add the chicken broth & mix everything nicely
- Cancel out of "Sauté" mode & close the IP lid
- Set the IP on Pressure cook for 4 mins & walk away
- After the 4mins cook time is up, IP will beep & then wait for 4 more mins just for some amount of natural pressure release & then release all pressure manually
- Next, open the IP lid very very carefully & mash everything using a potato masher so that any big pieces of the veggies are broken down.
- You can blend everything in a blender or use an immersion blender too.
- Next add the heavy cream + cheese & give everything a good mix
- Finally add salt & pepper as per taste and serve hot with Garlic bread.
PS : Making garlic bread at home using the store high French bread is the best. All you need is a butter mixture using any butter spread + garlic powder + dried Parsley leaves --> Smear sliced French bread slices with the butter mixture --> Bake on 400F for 7-8 mins for crispy garlic bread. This goes BEST with home made soups like tomato soup or this broccoli carrot soup.
