Mother's day special... Eggless mango cake


Every year Mother's Day, we make something vegetarian, eggless due to respect for our Mom who is pure vegetarian. She cooks the greatest Chicken Curry ever made by mankind but does not even taste it. Can you believe it?????

I know it sounds crazy but even if Mom is far away from us most of the year, the sheer thought of having her on Facetime or WhatsApp video on Mother's Day rejoices our heart and hence the need of preparing vegetarian & eggless recipes and sharing with her over video chat. 

This cake is a time-tested, tried & signed-off-by-Mom recipe. We made this one year when Mom was actually with us for Mother's Day and she LOVED it. She must have eaten most of it even if we kept saying that it has too much butter & probably very fattening but she didn't care & kept raving about how yummy it was. Thanks Mom !!



Here's what I used.
  • 1 ¼ cups All purpose flour (Maida)
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon all-spice (powder)
  • 1/3 cup Unsalted Butter melted and cooled
  • 14 oz can sweetened condensed milk
  • 1 cup Mango pulp (I used the canned version from Indian store)
Process
  • First mix the dry ingredients in a dry & big bowl
  • Then slowly add into the wet ingredients starting with the condensed milk, then mango pulp & then the butter.
  • Use a wire whisk to make sure that the mixture is smoothly mixed up.
  • Butter & line (if needed) a cake pan. I used a bundt cake pan (hence no lining). 
  • Bake on 350F for 35-40minutes (First check @ 30mins mark --> Followed by the clean toothpick test every 5mins after)
