Odiya Luni Khaja - Sounds exotic right?

- Khaja means "Fried snack like thing"
Well, you got me, translating Odiya language into English is definitely not my forte'.
But this snack is (well almost).
This is a very basic ingredients evening snack which is super famous in Odisha & is made in almost every household (some more than others).
It makes the best tea-time partner & "off-meals" "mindless" snacking snack.
I'll be honest & say it right now that this is not exactly very healthy but does give you the feel of home.

Ingredients
- 2 cups or 260 gms Maida (All purpose flour)
- 80ml melted ghee (Clarified butter)
- 1 tsp Kala Jeera (Nigella seeds)
- 1 tsp Salt
- 1/2 cup col water
- Oil to fry
Equipments
- Deep fry pan (Or Kadai) & Deep frying spatula (the one with a lot of holes in it)
- Rolling Mat
- Rolling Pin
- Knife
Process
- First mix Maida + Ghee + Salt well with your fingers
- The dough should mix properly & when trying a fistful the dough should crumble easy
- Add water in small batches to make a tough dough
- Keep kneeding with the inside of your wrist.
- Let the dough sit for a good hour or so
- Once an hour is over, get the dough & knead it again to make it plain & smooth. Do not add more water, you don't need to. Just use your fingers & palm.
- Next take a small ball of the dough & roll it into a big roti shape.
- Thickness should not be too much.
- Just as thick as a salty cracker will do.
- Next, cut thin stripes.
- And then rotate the rolling mat 75 degrees & cut thin stripes again. This will create the diamond shape.
- Next step is to deep fry the diamonds. Few things to keep in mind are:
- Always test the oil first.
- Fry these babies in Lo-Med heat.
- High heat will make these brown quicker & they will remain un-cooked from inside.
- Right when the white color turns light brown, you know you have to move quickly & bring the diamonds out.
- Enjoy these snacks with tea.
...and goes very well with instant coffee too :)
