Instant Pot Shrimp Pulao

Some may call its Shrimp biryani but I call it Shrimp Pulao. Why? Because my friend, Biryani is not made with Shrimps (ever). Neither is it made with Vegetables or Paneer or Fish by the way. Biryani is something that my definition is made with meat. So let's just call this recipe Shrimp Pulao. 



Anyways, this shrimp recipe is easy & flavorful and with  the correct amount of spices, it is a one pot kid-friendly wholesome meal. 

The flavors are very close to what I usually use for Biryani but you can easily make changes to suit your taste buds (or your family's). 

What I used

  • My dependable Instant Pot 6 Qt. Duo
  • 1.5 Lbs of medium frozen shrimp - Shelled & De-veined (Defrosted & marinated with salt + turmeric)
  • 2 cups Basmati Rice - Washed nicely & soaked in water for about 15 - 20mins. 
  • 2 cups Water
  • 2 tbsp Ghee
  • Whole Garam Masala - 2 green cardamoms + 1 black cardamom + 1 bay leaf + 8-10 pepper corns + 1 star anise + 1 tsp cumin seeds
  • 2 tbsp Ground Masala Paste - This is the Odiya's must have Wet Ground Masala Paste made ith Onions + Ginger + Garlic + Red Chillies + Cumin seeds
  • Yoghurt Mixture - 1/4 cup Yoghurt + 1/4 tsp Turmeric + 1tsp Garam Masala + 1tbsp Pulao masala + Salt to taste
  • Finely chopped Coriander Leaves + Mint Leaves
  • Friend onions (Store bought) - 1/2 cup divided into half - so that's 1/4 cup + 1/4 cup. 


Process
  • Set the IP on Sauté' mode --> Low---> When "Hot" shows up --> Add Ghee
  • Splutter the Whole Garam Masala
  • Then add the Ground masala paste & sauté' until raw smell goes away. 
  • Then add the 1/4 cup fried onions & give it a good mix
  • Then add the shrimp & mix everything together --> Fry the shrimp with the masala for 2 mins. 
  • Next add the Yoghurt mixture & give everything a good stir --> Cook the entire mixture for about 2 mins (don't need much time) 
  • Next goes in the Rice + Green leaves & Water --> Cancel the IP Sauté mode
  • Make sure to push all the rice underneath the water
  • Sprinkle the rest of the 1/4 cup fried onions on top. 

  • Close the IP lid --> Change Vent to "Sealing" --> Set on "Low" pressure for 4 mins. 
  • After 4 mins, let NPR for 3 mins
  • After 3 mins NPR, open the lid & using a fork, fluff up the rice. 
Enjoy hot pulao with your choice or raita or bhaiya or salad (or all three if you'd like)
