Spiced Apple Muffins

Image
Post-Holiday Breakfast can be a killer. After hours of slogging in the kitchen the night before, no one (I repeat, NO ONE) wants to slog again for breakfast the morning after. These spiced Apple muffins are designed to serve as the best breakfast. They are "make ahead" .. "store in an air-tight container for days"... "Can be consumed with milk or coffee & taste equally good" and last but not the least have the yummy flavor of spices & Apples which are so apt of the winters. I have used regular gala apples & I am sure the Granny smith kind will be good as well.  I have peeled the Apples however a lot of recipes ask to keep the skin intact.  I have used a mixture of Ground All-Spice  & Cinnamon for that kick of warm spices.  This recipe uses Eggs & regular AP flour.  What I used 2 cups Maida or AP flour 1.5 tsp Baking Powder 1/4 tsp Salt 2 tsp Ground All-Spice + 1 tsp Ground Cinnamon 2 medium Gala Apples Peeled Chopped into very small pi...

Egg Drop Curry

Image
When you get super bored with the regular style egg curry, try this egg-drop curry instead.  Why is it better & not boring you ask?? Well.. here's why... You don't have to boil the eggs hence don't have to worry about them getting overcooked Since you don't have to boil the eggs, you don't have to peel them - So YAY. You don't have to fry the eggs before making the curry so  this is really a One-pot recipe (Unlike the regular egg curry which has steps & batches)  This recipe will sound almost like Shakshuka but it's not. Shakshuka has lot more veggies & is almost dry-ish. This is a gravy based dish which is best enjoyed with white fluffy rice. No dal needed.  What I used 6 eggs (White or Brown - Your choice) 1/4 red onion chopped 1 tsp cumin seeds 2 tbsp onion+ginger + garlic paste (The essential/basic Odiya masala paste) 1 red tomato - chopped fine Mustard oil to cook the gravy Salt + Turmeric + Cumin+Coriander Powder + Garam masala A heavy bot...

Breakfast-a-la-greens

Image
The year 2020 like all years have brought me to a point where I realized (like every year) that I need to regularize my diet. Eat well. Eat healthy. Not eat less but eat smart. Part of that plan is that I got strict with my breakfast. The fact that I actually sit down & eat breakfast has something to do with it. So this year (as per my new years resolution), I make hot healthy breakfast usually containing eggs & green veggies and I actually sit down & eat with a steaming hot cup of coffee. When the COVID-19 pandemic hit us in California, I stopped going to the gym. But my coach insisted that I stayed accountable & every now & then asked me to post a picture of what I was eating & whether I was working out/ moving enough every day or not. So I made this green breakfast for myself one day to send her a picture and that is what I have today to share with all of you. The recipe is SUPER simple. Like mind-numbingly simple. But if you make it & eat i...

Anda Poha - Very early morning breakfast

Image
It's 4am in the morning.. and I am tired because I haven't slept in days.. and the baby is still crying in her sleep.. she's on my shoulder.. and I have to do everything with my right hand.. while I support her with my left hand... I am hungry too.. because what I ate last night has been digested due to all the walking & strolling with the baby...Yes, all in one night... I remembered that we had some left over poha from last evening.. and all I wanted to do was to heat up & eat that.. but where's the fun in it... and its 4am... & I'm thinking.. if I have this.. it better be worth it... so.. I decided to make anda poha with the left overs... What I had... Poha (left over from last evening).... I am sure we can use the MTR ready-to-eat poha as well..and it will work just fine.. 1 egg salt & pepper Process.... Heat oil & crack the egg directly.. (remember I have only one hand at this time at my disposal for cooking) sprinkle sal...

Egg Omelette Tarkaari

Image
Eggs + Curry : Good combination But what if you are bored with the old style boiled eggs fried & then added to the curry?  What if you wanted something with eggs which seeps in the curry so richly that every bite renders all flavors in your mouth.. Well then this is your solution.. tried tested & validated !! Egg Omelette Curry What I used: 2 Eggs 1/4 cup chopped red onions 1/4 cup chopped veggies if you'd like a healthy version of the omelette some chopped tomatoes (not much.. the gravy will have tomatoes) salt + pepper for the omelette For the gravy we'll just follow the simple onion + tomato curry like in this recipe How I did it: First I made the gravy exactly the way it is in this recipe here . Its the simple onion + tomatoes light gravy which can be savored with rice & roti/chapati equally well. Then I made an omelette just like I'd make a regular egg omelette. Beat egg, chopped onions, chopped veggies +salt + ...

Anda Pulao

Little Sis (Please do not go by little.. she's at least 1.5 feet taller than I am) : What's you planning on making for dinner? Me (almost confident) : Egg Pulao.. biryani sort of thing.. Little Sis: Isn't it binary? .. like is it Egg Biryani or Egg Pulao ? Me (confused) : Not very sure.. its not really a biryani method .. but it has biryani masala in it.. I saw it on youtube by Vah chef.. Don't need oven or anything.. Little Sis: Thats great.. I love youtube.. Did you see that new video from RA-One.. its funny.. Me (even more confused) : It has biryani in it?? Or Egg? The Vah chef is on that?? Little Sis: No.. just saying about the video on Youtube.. this site is a life saver when you r darn bored.. Me (smiling.. donno for what !!) : Ohh.. we are off the biryani topic.. I see.. we r talking about videos.. :) Little Sis: Well.. yeah.. you are making it right.. it will be awesomer than the youtube guy.. and make a little more.. I want it ...

Kotthu Paratha - Nothing Odiya About It !!

Image
Sometimes, it just beats me, as to why is Indian cooking so time-taking and tedious. Well, no doubt its very very tasty... I'd give my life for it.. but if its a weekday and you are hungry and you have to make something at home because you are too tired to go out.. what would you do????? What do I do?? I take a hot bath first... and try to think of one pot meals.. :) The kottu paratha is one of my favorite one-pot meals (meaning which cooks in one pan only & you don't need another side dish). It isn't Odiya...it's a Tamil dish (I think). I have seen many variations in the preparation but when it came to making at home.. I had no idea what to put in it.. so I put whatever I could recollect .. I hope you try it and it comes out all nice for you too... Ingredients here... Frozen Malabar Paratha (diced up real nice) .. I'm not very proud of it, but I can't make malabar paratha at home yet.. come on.. people need time !! 1 big juicy to...

Anda Tarkaari - Egg Curry

Image
I am not sure about others, but there are days when my heart (and tummy) craves for spicy eggs and white rice. I am yet not sure why would that be, because egg is not my favorite. So all I do is boil some eggs and make Egg Curry. This is probably a life saver when guests some in to our house and we do not have decent vegetables or fish in the fridge to serve lunch or dinner. Egg curry serves the purpose to the best of extent. Every Odiya loves eggs and egg curry on a warm winter night is till date the favorite of students I think. What you need: 5 Medium eggs (hard boiled) 1 medium onion 3-4 green chillies chopped. 2 small tomatoes (or 1 medium tomato) 1 tea spoon jeera seeds 1 tbl. spoon ginger garlic paste 1/2 tea spoon garam masala 1/2 tea spoon red chili powder 1/2 tea spoon turmeric powder Salt to taste Fresh green coriander to garnish Oil for cooking Start cooking... Start with hard boiling the eggs, peel them off and make small cuts with knife. Now, hea...

Rainy Sunday Morning.. And Egg Dosa

Image
California weather is really weird. It rains in the winter... shines the very day after.. and then again becomes cloudy the next day.. It is weird.. I think this happened last winter.... I got up hearing the pitter-patter of rain drops on my window pane and I was happily shocked that it was already 9:30 in the morning. Good lord, did not wake me up thinking that it is a Sunday and everyone needs the rest. But then, I had to think of a brunch which will be quick and have proteins as well (a must add ingredient these days in my household). I had some left over dosa batter, but to make some curry with it was out of the question. Have you ever felt that, when you wake up late you feel very very hungry and need to eat something right away (well a 10 min break is fine)? The same feeling went running in my stomach... So I thought up to combine dosa and eggs with a glass of milk and of course our very own Apple for the brunch. Healthy-check; Proteins-check;Fruits-check;Tasty-Lets see !!!...
